Me- you know what, I think we should do a post on all the great chefs we know, & it will make a great series of posts.
She- ( eating food quietly)- this sabzi, my mom makes the best. Mom are the best chefs in the world…
Me- (butting in between)- great idea ! We should do mother recipe’s posts.
She- no, what I was thinking, that I need more time to think about new ideas on writing posts & trying recipes…
Me- why can’t we fix on one theme peacefully ? (Angrily)
She- why don’t I throw this plastic, melamine dish at your oily face..
Me- why don’t I do that ? (Pick up my plate, throw at her, she ducks it & the plate hits the wall. The yellow dal splatters on the wall, looking like an ugly modern art).
She- how dare you ! How dare you ! ( she picks up a spoon, & throws at my face.).
Me- you…( gets up from the chair & pulls her hair)..
I am serious, this didn’t happened : ). But yes we did have our creative differences while thinking about our 2nd blog post.
So we decided on one thing, that no matter what no food will ever come between our friendship. Friendship makes meals more enjoyable. We all know that, we don’t enjoy lonely meals.
So yes, here we are ! We take this opportunity to thank our dear readers who read the first blog post & liked it, shared it & commented on it. Thank you. We will make it sure to not let you down.
A friend has suggested that we reveal ourselves to the blogging world, so that people can know us more better.
And you guessed it right, we are Power Puff girls sans the powers. We are merely reduced to powdery girls, who powder their faces & toil in the kitchen.
Actually & fortunately, no ! We are two friends Nikita & Shweta working in the same company & also share our common love aka food.
Without much ado, we now present you the first recipe of the blog. Inspired from Julia child …
Bruschetta (serves 2- comfortably)
Starter or a side dish
Adapts to being a grand breakfast or dinner side
Drinks to go with– virgin mojito, ginger ale
Ingredients:-
1 baguette
150 GMs button mushrooms,
2 medium ripe tomatoes (finely chopped)
30 GMs butter
1 tbsp finely chopped garlic
Olive oil
Salt, pepper to taste
Oregano to taste,
Handful of basil leaves, chopped,
Method-
1.Diagonally slice the baguette into slices & keep it aside.
2.Mix the tomatoes with salt & pepper, oregano & keep it aside.
3.slice the mushrooms. Heat a pan & put one tbsp olive oil & saute the finely chopped garlic in it till it is slightly caramelized. Add the mushrooms, salt & pepper.Don’t crowd them & stir fry till it is cooked and tender.
4.Heat a non stick pan. Put a generous splash of olive oil so that it covers the whole pan. Put the sliced baguettes into the pan & toast them till they become coppery brown on both the sides but not burnt. Take them out of the pan keep it aside.
Plating :-
1.Place the toasted baguettes in a plate. Apply some butter on them .
2. Spoon the cooked mushrooms on the toast & spread them evenly.
3. Take the salt & peppered tomatoes & spoon them on top of the mushrooms.
4.garnish them with a sprig of mint or coriander leaves.
Cheat’s version:-
1. You can use -pre sliced baguettes, like we have done in the recipe.
2. You can add a tablespoon of apple cider vinegar while sautéing the mushrooms, it will enhance the taste and give them a tangy flavor.
3. If you don’t like the dominant taste of olive oil on the bread, you can toast them in butter with olive oil or ghee.
4. Optional – instead of mushrooms, you can corn, peas or cottage cheese.
Verdict-
The taste of mushrooms with garlic was heaven.
Literally speaking, when you first bite into the bruschetta, you first encounter the crunch of the bread, then the mushrooms & the final note of tomatoes.
Definitely will make it again hopefully with some cheese & paneer : )
